Baby Red Potatoes Topped with Bacon and Cheese
20 baby red potatoes
2 tblsp. vegetable oil
1 tsp. kosker salt
1 tsp. cracked black pepper
1 tsp. granulated garlic
3 slices smoked bacon
1/2 cup shredded cheese blend
1/4 cup parsley or cilantro for garnish
1 tblsp. Joe's BQ Resque Red Rub
Brown bacon until crisp, drain on a paper towel and set aside chop bacon. Preheat oven to 375°F. In a mixing bowl, combine potatoes,oil,garlic,salt and pepper. Mix well and place on a sheet pan and cook for approximately 25 to 45 minutes (depending on the size). When potatoes are tender, remove from oven and allow to cool.
Make a small slit in the top of the potato and squeeze to open. Put on your toppings of bacon and cheese and parsley.
Sprinkle with Joe's BQ Resque Red Rub and serve.
