Barbecue Shrimp Taco with Pineapple Salsa
Serves 4
1/2 tblsp. vegatable oil
1 cup peeled deveined,diced shrimp
salt to taste
2 tblsp. Joe's BQ Resque Red Rub
1 cup diced onions
1 cup Joe's BQ Smoked Applewood BBQ Sauce
1/2 cup grated jalapeno jack cheese
4-6" flour tortillas-cooked and warm
4 sprigs fresh cilantro


Place oil in a large saute pan over medium heat. Add shrimp to hot pan add salt and rub, saute for a minute, until shrimp turns red. Add onions and saute for 2 minutes. Stir in BBQ sauce and bring to a quick boil and remove from heat. Add cheese and dtir to combine until cheese is melted into the mixture.

Place each tortilla in the center of a warm serving plate. Spoon equal portions of the shrimp mixture into the middle of each tortilla. Roll each tortilla into a cylinder with the seam side down.

Spoon a small portion of Pineapple salsa and cilantro sprig on top of each tortilla and serve
