Spinach and White Beans with Diced Red Bell Pepper
4 strips smoked bacon
2 tbsp olive oil
1 cup small diced onion
2 tbsp minced garlic
1/2 cup diced red bell pepper
3 lb fresh spinach
2 cups white beans
2 tbsp Joe's BQ Resque Red Rub
salt (as needed)


Dice bacon medium size. Preheat a saute pan. Lightly brown bacon. Pour off excess fat from pan and add olive oil.Lower flame, add, onions, garlic and diced bell pepper. Saute until tender. Add Spinach, white beans and seasonings and saute for 5 minutes. Adjust seasonings to your liking.
