Black Bean Soup
Servings : 6
Cooking time : 2 hours
2 cups dry black beans
2 smoked ham hocks
2 1/2 qts. chicken stock
1/2 cup onion,small dice
1/2 cup celery,small dice
6 cloves garlic
3 tblsp. olive oil
1 tblsp. cumin
5 springs cilantro
4 tblsp. Joe's BQ Resque Red Rub
salt to taste
pepper to taste
hot sauce to taste
2 tblsp.balsamic vinegar
moterey jack cheese , shredded
1/2 cup sour cream
1/2 cup green onions ,chopped


Simmer beans,stockand han hock for about an hour and a half. Remove meat and reserve for garnish. Puree beans.Discard bone. In a soup pot saute onion,celery and garlic. Add bean puree and add more stock if needed. AQdd seasonings and simmer for a 1/2 hour. Finish off with balsamic vinegar . Serve in a bowl and garnish with ham, cheese, dollop of sour cream and green onions
