Bacon Wrapped Sea Scallops with Applewood Smoked BBQ Dipping Sauce
4 spices smoked bacon
4 large sea scallops
4 tblsp. Joe's BQ Resque Red Rub
3 tblsp. canola oil
salt as needed
8 tblsp. Joe's BQ Applewood Smoked Sauce
Preheat oven to 400° Place bacon on a baking pan. bake in oven until half cooked (approximately 5-6 minutes) remove and let cool
Wrap each scallop with a slice of bacon and hold in place with a toothpick Season liberally with rub and salt lightly.
Heat canola oil in a skillet until just before it smokes. Brown scallops on each side (around 1-2 minutes).
Place in the oven for approx. 3-4 minutes.
Remove from oven and serve with a small dipping bowl of Joe's BQ Applewood Smoked BBQ Sauce
