BBQ Chicken Nachos
2 chicken cutlets
I bag crisp tortilla chips
1 cup green onions - chopped
2 cups refried beans
2 cups guacamole
2 cups monterey jack cheese - shredded
sliced jalapeno - garnish
tomato salsa - as desired
4 tblsp. Joe'sBQ Resque Red Rub
1 cup Joe's BQ Applewood Smokes BBQ sauce
Sprinkle chicken cutlets with the rub and either grill or saute, finish them off with BBQ sauce, and let cool.
preheat broiler and sliced cooled chicken into thin strips. Add dollops of refried beans, guacamole. Top with a hearty sprinkling of shredded cheese and place under the broiler until cheese melts. Then top of with tomato salsa, sliced jalpenos and chopped green onions.
